Dried figs may look sturdy, but moisture, heat and poor packaging can affect their quality. A few straightforward habits help protect them after opening.

Keep them cool, dry and sealed

Store dried figs in a clean, dry container with a tight-fitting lid. Keep it away from direct sunlight and heat sources such as an oven or stovetop. Use dry, clean hands or utensils when taking figs from the container so that you do not introduce moisture.

In a warm or humid kitchen, refrigeration may be more suitable. Use a well-sealed container to reduce contact with moisture and surrounding odours. Let the closed container come to room temperature before opening it to help limit condensation on the fruit.

Check the fruit after opening

Light-coloured natural sugar crystals on the outside of a fig are different from mould. If you notice an unusual smell, visible mould or excessive dampness, do not eat the fruit. When in doubt, it is best to set it aside.

If you buy a large quantity, portioning some figs for everyday use means the main package need not be opened repeatedly. In commercial storage, temperature and relative humidity also require monitoring. The underlying principle is the same at home: protect dried figs from moisture.
