When choosing olive oil, harvest timing and the character of the olives can be as useful to know as the information on the label. Early and ripe harvest oils can suit different flavour preferences.

Harvest timing influences flavour

Oil from greener olives may show more pronounced notes reminiscent of fresh grass, green fruit or leaves. Oil from riper olives may bring forward riper fruit notes. Variety, growing area and processing also affect the final flavour, so not every early or ripe harvest oil will taste alike.

The International Olive Council describes green and ripe fruitiness as distinct sensory profiles. Harvest timing by itself is not a quality ranking. Your preferred taste and intended use are more helpful guides.

Which one belongs on your table?

If you enjoy vivid green aromas, try the oil on salads, appetisers or as a finishing touch on a cooked dish. If you prefer a softer ripe-fruit character, explore how it works with your everyday meals. When tasting, notice the aroma first, followed by the balance of fruitiness, bitterness and pungency.
